Oh My! For some reason I have always been a sucker for Coffee and Walnut cake. If it's on offer on the few occasions when one enters a cafe I'll have a portion... to hell with the diabetes......
I recall my mother using Camp Coffee Essence when she made such delights. Mind you this is heavy on Chicory.
Interesting that you use espresso....a variable feast which , certainly over here, is too often made with "burnt" coffee beans (masquerading as high, French or Italian roast.....mind you, I have been spoiled since I found Monmouth Coffee's Espresso.
Walnuts....... this is the season....both kiln dried (usually from California) and "wet" walnuts..... I must nip round the corner to see if they have any left.... both a delight with a glass of port but this recipe seems to be rather indulgent.
BTW next year's (2025) and maybe the years after's Christmas cakes are currently filling the house with the scent of their cooking...
