What a great episode! I know I am definitely going to try this. I have peeps in my tribe who are off sugar completely - does this work without?

That's an interesting question. Frankly, I would say it will not be the same and probably extremely disappointing. You'd have to use unsweetened chocolate and then some sort of sugar substitute.

I was just curious. A friend makes a chocolate mousse and, if I remember correctly, she only uses eggs and chocolate... or was there another ingredients. Dang, I cannot remember and I actually spent the evening with her at a Super Bowl party.

I, have no such qualms and shall be making this full on ;-)

Reach out to that friend and see if you can pull her secrets out. She might use a lower percentage of chocolate which has more sugar.

I try to use 70-75% chocolate for these things, simply because I like the intensity. I suspect the higher you get, there the flavor becomes very bitter.
