Ground lamb is not something we can readily find around here. That said, these sound wonderful. I've seen dried lemon before but not lime. Interesting ingredient. I actually have fenugreek and all the other spices. Who'd a thunk?
If you can find ground beef or ground chicken, those would be good substitutes. You could substitute some lime zest, but add it to the meat instead of to the Berbere spice blend.
Why oh why did I make my chili before this recipe came out? I had taken out ground beef with the intention of doing something. I shoulda waited ;-) Had no limes, though. Oh well. Next time.
Pin it and maybe sometime in the future you'll make it. There's a family reunion in April and I am thinking these would be good for the cocktail party.
Wow we were both thinking meatballs! This morning I downloaded a Salisbury meatball recipe, a prickly porcupine meatball (has rice) recipe, and a lionshead meatball recipe. We now know there is no longer fried food in our food prep future as neither of us feels well after, so air fryer and oven crispy-baked wings for superbowl. But I like the idea of a delicious meatball too. Yours looks amazing.
You have done some research, Sue. I think almost every country has some version of the meatball. How do you choose?
You know those Swedish meatballs with the lingonberry sauce? I used to love those. Since most meatballs are made with some kind of gluten, I typically avoid, the Swedish ones included.
Nothing wrong with air frying or baking! Like you, I am not into the fried food anymore. Even pan-frying is pushing it.
This is totally mood-driven. We are looking to cut carbs too because Marsha is very carb sensitive but because she is diabetic, still needs some carbs in her diet.

Oh, have no fear. I know where to go when I am searching for inspiration ;-)

Be well and thank you for visiting!

She's lucky she has a chef to help her with her meal prep. :D
She has you to thank too for that!!!
Glad to have been part of your process. :D
