Yes, and I love it—however, I don't have the ingredients. I live in a small suburb, so my usual grocery store doesn't carry them. I must plan ahead by ordering them online or making time to drive to an Asian market.

A well-executed chawanmushi is heaven in a cup 😋. We also do a more Chinese style egg custard with just pork mince, using a 1-to-2 egg-to-liquid ratio (also by weight), that's steamed in a shallow bowl. Just before serving, we sprinkle it with scallion slivers and ladle sizzling oil over the top.

Oh, my goodness, N Leana, that sounds divine. A friend showed me a photo of one made in a crab shell. Would that be a style you're familiar with?

Just asked a friend and she said Chef Hiroyuki Terada is quite well-known for his crab chawanmushi cooked in its own shell.

There was a China Buffet around the corner from where Marsha and I used to live. They steamed their egg custard in a Dungeness crab shell. OMG it was to die for!!! They only served it at lunchtime. Heaven. Now I feel the need to make it!!!!
