Well gee... I never paid attention to the de-puffing of my quiche! Thanks for these special tricks to keep the puff up! I think I'll by pass the adding part of the eggs at the 2/3 mark, though. With my luck, I'd be poisoning my kids... wait.... no, I'm the one who would be stuck with the consequences!
